Low FODMAP Truffle pasta with parmesan cheese

I love the simplicity of the Italian cuisine. I am always amazed how they can make a perfect meal with only a handful of ingrediënts. The best pasta I ever ate, was in a small restaurant in Trastevere in Rome. That holiday was years ago, but I never forgot about the pasta. Spaghetti cacio è pepe. Pecorino cheese, black pepper, olive oil and some butter were the only ingrediënts in this pasta and it tasted delicious. I will definitely try to recreate that recipe one day and share it on the blog, but today I have another simple pasta recipe for you. Low FODMAP truffle pasta with parmesan cheese. Or better said: pasta tartufo e parmigiano 🙂

Truffle oil, parmesan cheese, black pepper and some butter. That’s all you need for this pasta. You could add some canned mushrooms (only mushrooms from a can are low FODMAP up to 100 g per serving), but I went for as simple as possible. The pasta doesn’t need more than this. It is delicious!

Truffle oil has not been tested on FODMAPs yet. Truffles by themselves are probably not low FODMAP because most kinds of mushrooms are high in FODMAPs. But as garlic infused oil is low FODMAP, I also expect truffle infused oil to be low FODMAP. I recommend trying this recipe after you have finished the elimination phase. 

What do you need (for 2 servings)

  • 160 g gluten-free spaghetti
  • 2 tbsp truffle-infused olive oil
  • 2 tbsp butter
  • 60 g parmesan cheese
  • Black pepper

How to prepare the low FODMAP truffle pasta

  1. Bring a pan with water to boil. Put the spaghetti into the pan and add a little bit of olive oil and a pinch of salt. Cook the spaghetti according to the instructions on the package.
  2. When the spaghetti is almost cooked, put some butter, the olive oil and black pepper to taste into another pan. Heat on low heat until the butter has melted and turn off the heat.
  3. Drain the spaghetti and save 100 ml of the water. Add half of the water to the butter and the olive oil in the pan and add the spaghetti. Stir this together on medium heat.
  4. Add the cheese and stir vigorously. Continue to stir until the cheese melts and the pasta gets a creamy coating. Add some extra pasta water if it doesn’t get creamy enough.
  5. Divide the pasta over two plates and serve immediately. Sprinkle some extra parmesan cheese and black pepper on top. It is nice to serve the pasta with a salad on the side.
