Low FODMAP Quick Tomato Rice

I notice that I often go for boring side dishes for dinner. Cooked rice, millet, pasta or baked potatoes. Not very exciting, but it is quick to make after you come home from work in the evening and don’t feel like cooking anymore.

But luckily also more exciting side dishes don’t have to cost a lot of time. With a few additions to my white rice, I made this quick tomato rice. Very tasty and very easy to make.

This side dish goes very well with recipes from the Turkish and Greek cuisine, such as köfte, but it is also good with some simple vegetables and/or meat.

Description

A simple side dish for dinner. This quick tomato rice is easy to make and very good. Low FODMAP, gluten-free, lactose-free, vegan


Ingredients

Scale
  • 1 tbsp olive oil + 1 clove of garlic (you will use this to make low FODMAP garlic infused oil. FODMAPs are soluble in water, but not in oil. Therefore you can make garlic infused oil by heating a clove of garlic in olive oil and removing it afterwards)
  • 300 g white rice
  • 1 can cubed tomatoes (400 g)
  • ½ stock cube (check the ingredients for FODMAPs) + 250 ml water
  • Pepper and salt

Instructions

  1. Heat the oil in a pan. Add the clove of garlic when the oil is hot and fry it for two minutes. Make sure the garlic doesn’t get too brown. Remove the garlic from the oil after two minutes.
  2. Add the rice to the pan and stir well.
  3. Add the cubed tomatoes, the water and the stock cube and stir everything together. Bring to boil.
  4. Lower the heat and leave the rice to simmer for about 15-20 minutes with the lid on the pan.
  5. Stir the rice well, taste and season with salt and pepper if necessary.
  • Cook Time: 20 min
