Even though I have never been to America, I try to keep up with American food trends. And since I read blogs and use Pinterest that is quite easy to do. It is funny to see how things that are popular in America become popular in the Netherlands a year or so later too. S’Mores are things that I have never eaten in their original form (I know right!), but I know that they have been crazily popular for years and I really wanted to make a recipe with them. It is thé time of the year for s’mores and I love marshmallows, so I think this is going to be a winner for me. For a barbeque with friends at my place, I made these low FODMAP S’Mores bars. And oh man, this really is the perfect BBQ dessert!

Baking is still one of my favourite things to do. Cakes, cookies and homemade bars are my favourite things to eat when I am treating myself and therefore I try to bake regularly. Today’s recipe is a combination of two other recipes on my blog. The basis of this recipe is the same as the blueberry crumble bars and instead of blueberries, I put homemade lemon curd into the bars. This turns them into super fresh lemon curd crumble bars that are perfect for the summer!

I fell in love with the nordic ware bundt cake tins the first time I saw them and now that I finally got my hands on one, I couldn’t wait to try it. The result was a beautiful and super moist cake with distinct chocolate and vanilla flavours. The perfect cake to have next to a cup of tea. It didn’t survive long in my house ;)

For my birthday, I was looking for cakes that I could easily take with me to work. No birthday celebration without homemade cakes if you ask me, but taking two cakes with you on a bike is not that easy. Therefore I decided to make two cakes with frosting. The recipe I am sharing with you today and this lemon cake. Rectangular cakes in a cake tin are a lot easier to take with you and the frosting stays in place better. I used the recipe for my carrot cake and turned it into a rectangular cake. The recipe is more or less the same, but I still wanted to share this variation with you: my low FODMAP carrot cake with cream cheese frosting! Carrot cake will always be one of my favourite cakes, the combination of the cake with the creamy frosting is just perfect.

The recipes for both the brownies and the caramel sauce that I use in this recipe are not my own recipes, but I liked the combination so much, that I wanted to share them with you anyway. This brownie recipe was brought to my attention by reader Cher. She said they were the best brownies she had ever tried, so of course, I had to try them too. The recipe is by Vegetus (in Dutch) and I made it gluten-free and low FODMAP by replacing the normal flour with gluten-free flour. The recipe for the caramel sauce was low FODMAP already, but I added some coarse sea salt to turn it into salted caramel sauce. The result of this combination was delicious low FODMAP vegan brownies with salted caramel sauce. Next to low FODMAP and vegan this recipe is also gluten-free, dairy-free, wheat-free and nut-free, so suitable for almost everybody!

Lemon cakes always remind me of Starbucks. Starbucks always has this beautiful lemon cake with a thick layer of white frosting on their displays. I have never tried it because it isn’t low FODMAP, but it always looked delicious to me. A few years ago, cakes with lemon seemed really unappealing to me, but since I made this recipe for lemon drizzle cake that has changed. I decided that I could try to change this recipe into a low FODMAP lemon cake with a delicious layer of tangy frosting and that worked out perfectly. On my birthday, I served this delicious cake twice and it was a success!

Low FODMAP Blueberry Crumble Bars (Gluten-free)

Today is my 25th birthday! It feels like quite a special age, as it is one-quarter of a century, so I won’t let it go by unnoticed ;) According to my standards a birthday is not a birthday without cake! I prefer serving homemade cakes on my birthday and this week I am taking on the challenge to bake six different things. I am celebrating my birthday next weekend with friends, I baked cakes for work today and last weekend I also celebrated my birthday with my family. Six cakes is a little crazy, but if you want to serve low FODMAP cakes, you usually have to bake them yourself. So that’s what I did :) These low FODMAP blueberry crumble bars turned out very well. In less than 10 minutes after my family had arrived, everything except one little piece of crumble was gone. So, I think it is safe to say that this recipe was a success.
