No-bake Cookie Dough Bars

Do you remember my recipe for edible cookie dough? That fluffy sugary dough that you can eat with a spoon and doesn’t contain calories at all (cough cough)? I have good news for you because today I have a recipe with this cookie dough for you. I have only added one ingredient and that ingredient makes it easier to share the cookie dough with others. By putting the cookie dough into a baking tin and by spreading melted chocolate on top of it, you get no-bake cookie dough bars!


To protect myself from eating the whole batch by myself, I took the cookie dough bars to work. And that worked very well because, at the end of the day, they were all gone! I don’t know if it is necessary to write down the recipe for the cookie dough bars for you because it is so simple. But just to be sure, here is the recipe!

What do you need (for 16 cookie dough bars)

As I also noted in the recipe for cookie dough, too much fat and sugar (and chocolate, which is a combination of both) can also trigger IBS complaints. Therefore, I advise eating one cookie dough bar per serving maximum.

How to prepare the no-bake cookie dough bars

  1. Grease an oven dish or baking tin or layer with baking paper.
  2. Press the cookie dough into the tin and even it out.
  3. Melt the chocolate au bain-marie or in the microwave. Pour the chocolate over the cookie dough. Spread it over the dough with the back of a spoon, so you get an even layer of chocolate.
  4. Put the cookie dough bars into the fridge for a few hours for the chocolate to set. If you are very impatient you can also put them into the freezer for a shorter time. But the bars are best when they are cold.
  5. The cookie dough bars are quite heavy, therefore I cut the bars that you see on the pictures in half another time. This recipe makes about 16 bars.
