Pumpkin! I can’t get enough of it in this season. I have already shared several pumpkin recipes with you and in the last years I published several recipes too.

I thought it would be nice to group a collection of my pumpkin recipes together for you, so you can find them easily.

You can use pumpkin in everything. You can make delicious breakfasts with it, you can bake with it and you can use it in your recipes for dinner, such as pasta, risotto or soup.

Below you’ll find 15 pumpkin recipes that can all be found on my website. All must-tries if you ask me! Eating something with pumpkin gets me into that autumn vibe even more and I love it. One of my favourite seasons of the year! 

Pumpkin Pancakes

Fluffy pancakes with a drizzle of maple syrup. A delicious breakfast to start the day with! 

You make these pumpkin pancakes with pumpkin puree, oats, almond milk and an egg. Super simple ánd tasty!

Pumpkin tomato soup

You can’t make an overview with pumpkin recipes without a recipe for pumpkin soup. This pumpkin soup is a little bit different because it is a pumpkin tomato soup.

The flavour combination of pumpkin and tomato is perfect if you ask me. It is one of my favourite soup recipes on the blog!

Mexican Casserole with Pumpkin

This casserole is the most popular pumpkin recipe on Karlijn’s Kitchen. It is kind of like a pumpkin lasagna but then you use corn tortillas instead of lasagna noodles. 

A yummy comfort food meal for a cold autumn or winter night.

Pumpkin bread

Fancy a healthy snack with pumpkin? Then this pumpkin bread is for you. 

This bread is like a pumpkin-spiced cake, but then slightly healthier. With maple syrup, pumpkin puree and pumpkin spice. The pumpkin spice gives the cake that real autumn flavour.

Pumpkin Risotto

How colourful does this risotto look! Just like the casserole above, risotto is one of my favourite comfort food dishes in autumn and winter. You can create lots of different risottos.

This is a vegetarian risotto with pumpkin puree, goat cheese and pecan nuts. Did you try it yet?

Pumpkin pasta

A super simple pumpkin pasta with a sauce of pumpkin puree, stock, lactose-free cream and tomato paste.

A great recipe for when you want to put a healthy meal on the table, but don’t have a lot of time.

Gluten-free quiche with pumpkin and spinach

Pumpkin and spinach is a great combination. Especially when you also combine it with feta, yum! 

This quiche makes a great dinner, but is also delicious for a potluck dinner or brunch.

Stuffed spaghetti squash

Do you already know the spaghetti squash? The filling of this squash looks like spaghetti noodles. You can mix the pumpkin spaghetti with a nice filling and make a tasty stuffed spaghetti squash. 

I filled this spaghetti squash with a mix of lactose-free cooking cream, spinach, mushrooms and goat cheese.

Spicy pumpkin noodle soup

Pumpkin soup, but a little different! This is a filling and spicy pumpkin soup with noodles. The soup is full of spices, is a little spice and fills you up well because of the noodles that are in. 

Ideal as a light dinner or for lunch.

Healthy pumpkin granola

A lovely homemade granola with pumpkin. The perfect autumn breakfast! You make this granola with oats, pecan nuts, pumpkin puree, pumpkin spice and a little bit of brown sugar. 

Delicious with some lactose-free yoghurt and low FODMAP fruit of your choice.

Roasted pumpkin soup

This recipe is probably the most classic pumpkin recipe that you can find in this list, but I couldn’t leave it out. 

Because you roast the pumpkin in the oven before making the soup, the soup gets an even nicer flavour.

Pumpkin energy balls

Handy healthy energy balls that are easy to take with you as a snack. 

You make them with oats, chia seeds, pumpkin puree, almond butter, pumpkin spice, pecan nuts, maple syrup and optionally chocolate chips. So tasty!

Pumpkin potato mash

Do you love potato mash? Then this recipe is for you. In the Netherlands, we have a traditional dish called stamppot. This is a dish of mashed potatoes with some leafy greens stirred in. It is the ultimate winter recipe.

I made a twist on this recipe and made a pumpkin potato mash with rocket lettuce, goat cheese and pecans. Yum!

Healthy Pumpkin Cake

A spicy pumpkin cake with a cream cheese – yoghurt frosting.

It makes a great snack or breakfast and I’ll promise you that it won’t be in your fridge for a long time 😉

We end this list with a sweet dessert! I can already hear you think cheesecake with pumpkin, is that even nice?
