Another American pie recipe! I probably wanted to try this recipe even more than the pumpkin pie recipe. I love pecans and I already made pecan bars last year, and they were very good, but this year it was time for a low FODMAP pecan pie! And I can tell you, it is worth making!
This year, I celebrate Thanksgiving! Or at least: I had a Thanksgiving dinner. I have a group of friends who I see once in a while and then we always cook together. We pick a country and cook recipes from that country. We are all crazy about food, so the result of those evenings always is that we make way too much, we eat and talk a lot and that we are so full that we can roll home (as we say in Dutch). I love it! This month we had a dinner with the theme Thanksgiving. We had our dinner a few weeks before Thanksgiving because that was more convenient, but that didn’t make it less fun. I am always very happy when I have such as dinner because it is a perfect excuse to make some recipes for Karlijn’s Kitchen and to share it with other people. This year I really wanted to make a low FODMAP pumpkin pie and a low FODMAP pecan pie and I find it a shame if I cannot share it with other people.
Fudge is one of my favourite things in the world. In the Netherlands, we have a brand called Johnny Doodle and they have the most delicious salted caramel fudge. I could eat the entire bag at once, it is so good! I used to eat this fudge now and then with a lactase pill, but I feel like my body does better without cow milk products. So I am trying to experiment more with dairy-free products and I only use lactase pills when I really have to. Recently I learned about the existence of condensed coconut milk. A perfect replacement for condensed coconut milk from cow milk. With this condensed coconut milk, I made my very first low FODMAP chocolate fudge. Gluten-free, dairy-free and vegan. And mannn it is so good!
When I asked my boyfriend what kind of cake he would like to have for his birthday, his answer was: cheesecake. Yes, I have raised him well. Because, coincidentally, cheesecake is also my favourite cake! You might know that if you have taken a look at the category cakes & sweets on my blog. I haven’t baked cookies for ages. The last time that I shared a real cookie recipe on my blog was in February of 2016 :O. Time to share another cookie recipe with you. I picked my all-time favourite combination and made low FODMAP peanut butter chocolate chip cookies!
Even though I have never been to America, I try to keep up with American food trends. And since I read blogs and use Pinterest that is quite easy to do. It is funny to see how things that are popular in America become popular in the Netherlands a year or so later too. S’Mores are things that I have never eaten in their original form (I know right!), but I know that they have been crazily popular for years and I really wanted to make a recipe with them. It is thé time of the year for s’mores and I love marshmallows, so I think this is going to be a winner for me. For a barbeque with friends at my place, I made these low FODMAP S’Mores bars. And oh man, this really is the perfect BBQ dessert!
Baking is still one of my favourite things to do. Cakes, cookies and homemade bars are my favourite things to eat when I am treating myself and therefore I try to bake regularly. Today’s recipe is a combination of two other recipes on my blog. The basis of this recipe is the same as the blueberry crumble bars and instead of blueberries, I put homemade lemon curd into the bars. This turns them into super fresh lemon curd crumble bars that are perfect for the summer!

I think they are perfect for a birthday breakfast, father’s day or mother’s day (I know I am too late, but maybe for next year!) or just to treat yourself. Today I have a very tasty recipe for you! A chocolate and vanilla flavoured low FODMAP marble bundt cake. I fell in love with the nordic ware bundt cake tins the first time I saw them and now that I finally got my hands on one, I couldn’t wait to try it. The result was a beautiful and super moist cake with distinct chocolate and vanilla flavours. The perfect cake to have next to a cup of tea. It didn’t survive long in my house ;)
